Homemade Tortilla Chips

Having people over? Then you're probably going to have that token bowl of tortilla chips out for your guests. If you're going to serve them, why not make them your own homemade chips? Consider the seasoning blend below to be merely a suggestion -- make your own blend to fit your personal taste, or make a few different blends and serve different varieities of your own chips. The possibilities are endless! 

INGREDIENTS:

  • 48 fresh corn tortillas
    • if possible, look for a locally produced brand of corn tortillas, ideally made that day 
  • 64 oz. peanut oil (or other frying oil)
  • 1 tbs. kosher salt
  • 1 tsp. freshly ground black pepper
  • 1 tsp. paprika
  • 1 tsp. cumin
  • 1 tsp. garlic powder
  • 1 tsp. chili powder

STEPS:

  1. In a dutch oven, heat peanut oil to 350 F.  Using a sharp knife, quarter tortillas (this can be done in stacks of 12 tortillas at a time). 
  2. Fry 8-10 tortilla quarters directly in hot oil for 25-40 seconds.  Remove to a tray lined with paper towels, shaking free any excess oil before removal.  Season hot tortilla quarters with mix of salt, pepper, paprika, cumin, garlic powder, and chili powder (or with your own spice blend) immediately upon removal from oil.  Repeat process with remaining tortilla quarters. 
  3. Congrats, you've just made your own tortilla chips!  Wait 2-3 minutes before serving, and serve with guacamole, a grilled tomato salsa, or just by themselves -- the flavor of the seasoning should be enough to make your chips a great snack standing alone.  Enjoy!!
