Dave's BBQ Ribs

INGREDIENTS:

2 Tblsp bacon drippings

1 Medium Spanish onion, finely chopped

1 Clove garlic, minced

14 Oz. bottle of catsup
-
6 Tblsp. worcestershire
-
2 Tblsp cider vinegar
-
1/ 4 Cup dry white wine
-
1 Tsp dried mustard
-
2 Tblsp dark brown sugar, packed
-
2 Tblsp pure ground hot red chile
-
2 Tblsp pure ground mild red chile
-
1/ 4 Tsp cayenne pepper or pequin quebrado, if possible

3/ 4 Tsp ground cumin
-
1/ 4 Tsp ground coriander seed
-
Fresh ground black pepper
-
1 Tsp liquid smoke
-
8-15 cloves garlic
-
3 cans flat, light-colored beer
-
4 to 6 Pounds baby back pork ribs in uncut racks
STEPS:

Melt bacon drippings in 2 quart saucepan on medium heat

Add onion and garlic, saute until transparent

Add remaining ingriedients through liquid smoke, reduce heat to low

Simmer uncovered for 15 min, stirring occasionally. Set aside until ready to use

Preheat oven to 275 degrees

Place ribs in a shallow roasting pan

Pour 2 cans of flat, light-colored beer and 1/2 cup water into the pan

Drink the other can of the beer
-
Smear 8-15 cloves, to taste, of fresh chopped garlic on the slabs, and sprinke with fresh ground black pepper; also, this wards off vampires
-
Bake ribs for 3 hours, covering the pan tightly with aluminum foil

Occasionally spoon some of the juices on the ribs to prevent drying
-
Spoon sauce over the ribs

Eat ribs furiously
